    We Need Help w/ Salsa
    Hi all,

    We're having a little salsa making contest tomorrow in the office and Jeff and I need some help.

    Does anyone have a fantastic salsa recipe they're willing to share? Any ideas on what we can do for presentation (it counts just as much as the taste)?

    Any info would be greatly appreciated!

    We'll let you know what the winning recipe is if we can get our hands on it!

    If you can get dried 'Chile Ancho' it makes a beautiful and simple salsa. You didn't specify what 'country' your salsa is for, the Chile Ancho recipe is Mexican.
    To make the salsa, just slice open the dried chile, (wear gloves or be careful, picking out seeds by hand can leave your fingers burning) remove the stem and seeds and cover with water in a saucepan, bring to boiling and let it cool. If you like it hot, pour the cooled chiles and water into a blender and blend smooth - that's it, add salt, cilantro , onion and tomato to taste. If you like it milder, pour off the first water and bring to a boil again, cool again, then blend. This salsa is used to make tamales, but it goes great over steak (Arrachera or skirt steak), quesadillos and many mexican dishes. Makes great and simple enchiladas.

    that sounds good.... any ideas on presentation?

    I was thinking about taking a sombrero and cutting the top off, then putting the salsa bowl in the middle and filling the rim with tortilla chips. But I think someone may have done that last year, so we're trying to get creative.

    I make canned salsa in the summertime and I just stick to a very simple recipe. I chop the tomatoes, add diced onions, green chilies, salt, pepper, cilantro, and sliced black olives. Bring it to a simmer until the liquid cooks down a little and that's it.
