Would you be interested to apply to a merchant that offers "alternate to online ordering method" ? They have a page that explains how to order their products offline:
Print our Mail/Fax order form.
Complete the form and mail or fax it using the information on the form.
So, if I send traffic to their site and one potential buyer decides to print out the mail/fax order form and a sale occurs, would I still get credited ?

Depends on the merchant. There are quite a few that do track and pay for sales that occur via phone, fax and mail.
Our own affiliate program tracks all sales that occur from an affiliate link that are phone, fax or mail. How we handle the issue is the customer still has to submit the order to us by going thru the check out process. During the check out process they can choose to pay via credit card or via fax/mail. Instructions are then given on how to totally complete the order.

I would do a test purchase and see if it requires any sort of affiliate referral code or not.
