    If you transfer it to your side and read it, and the next time you want to do this, will the log be new? or the entire thing all over again with the new info from your last transfer included?

    From my experience the server will keep adding to the end of your log file after you transfer it to your side... The only way to mess with it is to delete the file which I wouldn't recommend.

    Those log files can get pretty big.

    Depends on your host. Most hosts divide them into monthly chunks.

    However, if you use something like HappyLog log analysis program, you simply set the dates you wish to view and away you go.
