I don't know if I am in the right forum to ask this but :-
If I moved an existing PR6 site to a new server thus getting a new IP address, would this be detrimental to my existing Google PR?
Thanks in advance.

No - Google relates PR to your Domain Name such as YouTrek.com not your IP Address (Ficticious) 188.8.131.52
Your PR 6 should remain intact from the move.

One exception make sure the whole server ain't PR0'ed. I remember Google did this entire server not too long ago because the host was selling some PR scheme.
