I have an forum for which I am going to add a “store” to with related products, but I would need to use 2 – 3 different merchants.
Is it okay/wise to have multiple products from multiple merchants?
Would love to hear your opinions and open to any suggestions that you may have.

As long as the products and the merchants are relevant to the audience you are going after, then I think it is actually preferable. Rather than solely building shops based on the relationships you have with your merchants, it allows you to build shops focused on the products your users are interested in which in my opinion is by far a better customer experience.

That is why I do love PopShops also. I just wanted to get some feedback on using the different merchants. I will work on it this week and get it up and running.
