Effects of Moving a Site To a Subdomain That Redirects to Domain
I am debating whether or not to move another one my sites to a "add-on" domain of one of my hostgator accounts. The site resides in a subfolder but one would never know it sat in the folder since it redirects to my domain.

Any big drawbacks in doing this SE wise or otherwise?

I host about 5 sites that way and never had any SEO issues. I'd say go for it.

Just make sure you have everything just right with htacces, links, directories, etc before you pull the switch. If the SE's happen to be around during a move with issues, it may take a while to get the problems corrected.
