I want to use cURL to grab a webpage, then use PHP to send that webpage as an HTML email...
I can easily grab a webpage via curl. If I then display the webpage in a browser, no problem.. But when I email what cURL has grabbed, I just get the html code when read within an email program..
What do I need to do, either via cURL or PHP, that would allow the output from cURL to be viewed as an html email?

This isn't a curl issue - I think you have to specify the MIME type when you send the mail using mail().
Alternatively you could get the html, save it to a file, and them email it to yourself as .htm and view it from a browser.
